I say, and with God's guidance: the weight after slaughter is a method of estimation. If it is customary and there is no dispute about it, it is permissible. You have the right to everything that comes from it, including skin, head, and hanging. The weight is merely a means of estimation, and thus nothing of the reward is lost. And God knows best.
